Very Berry Salad

The beauty of this salad is the colorful variety of berries. It’s great for lunch or doubling up on ingredients and taking to a BBQ. I used strawberries, raspberries, blueberries and blackberries to keep the flavors interesting. I picked the salad mix straight from my organic garden. It’s my favorite! But you can use a salad mix from the store or even fresh spinach. I also added feta cheese and thinly sliced red onion. After I photographed this beauty and started eating it, I decided to add sliced almonds for an added crunch and it was the perfect addition! I totally recommend adding almonds! I topped the salad with a homemade sweet poppy seed dressing (not pictured) but you can you any dressing you’d like. If you don’t have time to make your own dressing, I highly recommend Ken’s Steakhouse Lite Raspberry Walnut Vinaigrette dressing for this salad. It is amazing!

For my dressing I combined olive oil, apple cider vinegar, honey, poppy seeds, salt and dried mustard. It’s super simple and incredibly tasty. The dressing pairs well with any salad, especially ones with fruit. You can use just about any kind of vinegar. I enjoy raspberry vinegar or apple sider vinegar.

The truth is, when I make this salad, I don’t measure. Not shocking if you know my true tendencies in the kitchen. It drives my husband crazy haha! Sometimes I want a monstrous size salad and other times, I eat it with a wrap or soup and scale my salad down a bit. So the ingredients below are complete estimates. Feel free to add or subtract, according to your taste.

Hope you enjoy and bon appétit!
